i'm scared to ask but did everyone knit a sock in a day??

Not at all Franney. There was a lot of work with graph paper, charting, working out how to allow for extra stiches when using cables and ribbing patterns to accommodate stitch patterns flowing from ribbing.

Then there was re-adjustment for foot sizing to consider. We spent a lot of time choosing stitch patterns and discusing how they might work. Cookie had her own knitted socks with her ( which are being held aloft in the photo ) and it was good to see them and how they worked too.

Most of us didn't progress any further than the rib in actual knitting. They will be ongoing projects. Knitting wasn't the real point of the day, it was the design aspect of a sock.
