My Cooking New Years Resolution is to eat as little meat as possible.
This is not really on ethical grounds, it's more because I think I over rely on meat. I think "what's for dinner?" and I look for the meat first with the veggies as also-rans.

I'm not planning on "becoming vegetarian" as a grand statement, and I will eat meat at restaurants or if I'm visiting people.


So we are now on the 4th Jan and we have had

1. Veggie curries (dhal, quorn which I know is cheating, and pumpkin and potato done roasted in the oven with spices)

2.  Pumpkin soup, with crusty bread.

3.  Mushrooms on toast (scrummy quick dinner which I eat anyway).

4. Tonight we are having spicy butternut squash burgers with fresh tomato sauce and baked potatoes.

I'm sure there are lots of things to try so what are your favourite veggie meals for everyday eating.

I've been a veggie since I was 7 so cook veggie all the time. DH eats meat when we go out but I don't want it on the plates or pans so he doesn't have it at home.

I cook all sorts.  This week we've had baked potatoes with a tomato based 'throw together' (whatever veg I have in the fridge but not root veg) & basil mayonnaise Slimming world style.  I did double the amount of baked spuds & we had potato skins for lunch the next day & cheese omelette's with potato & onion patties for dinner using the flesh of the potatoes that were left over from the skins.  

We have pasta, risottos, curries, all sorts really. I use quorn a lot , tofu & pulses as I try to find alternative sources of protein.

I try & use seasonal vegetables & make roasted vegetables, baked veg, stuff veg with cous cous etc etc

I'm also slimming so am limiting my cheese intake but I'm finding the Slimming World diet quite easy as I like cooking & don't use a lot of packaged foods.

In winter I make a lot of soups & they're especially good for lunches in a food flask.  Lentils are a good bulker & I like them with a tomato & lemon soup.

Veggie lasagne is my absolute fave and I'd eat it over the meat variety any day - having said that it's more of a summer dish as I make it with summer veg (courgettes, aubergines, mushrooms  carrots and red pepper)

I also like veggie pasties - There was a recipe on my blog earlier in the year: here

Don't forget about fish too - all those omegas are great for our hormones!!! and brains (!)

I love miso soup:

Pan of simmering stock, throw in sliced onion and garlic plus any veggies knocking about like thinly sliced carrots, leeks, small broccoloi florets, etc.

After a couple of minutes add cubes of tofu and noodles.

When the noodles are soft, turn the heat right down and stir in a tablespoon of miso and blend gently. Don't bring to the boil or you will destroy the things that are good for you whose name I have forgotten in the miso.

You can add a small amount of tuna or seafood or shredded chicken if you prefer.

I have been veggie my whole life(10 years)
and my sister has also been veggie her whole life(8 years)
my mum (murdo) is also veggie (but dont know how long she has been veggie)

So, PP's what are your favourite dinners?

Tonight we are having gnocchi and chunky tomato sauce (the boys in the house are having sausages with theirs and I will have red kidney beans with mine).

The only bad this about this is I find myself looking longingly at the cheese all the time.  Sad

I was watching a programme the last evening about old products and advertising. A recipe made with veg and marmite as stock was topped with a mix of flour and butter (no salt enough in the marmite) rolled out to cover the top and the lid was put on the pan and simmered for 45 mins.I think the topping ends up like a kind of dumpling?

I am sure they called it sea pie?? Has anybody heard of it? I wish I had paid more attention to it. It sounds like something we would all eat.

this looks like it........ Confused  obviously without the meat!

what do people use instead of meat in something like a casserole then?? I wouldn't hae a clue really as I've always eaten meat, but I think veggie alternatives are often healthier Confused
