Lentil lasagne is nice.
I'll look it up, it's a Rose Elliot recipe. With red wine in the sauce!!!

Tonight I are mostly eating leftovers!! Laughing

Got the leftover lentil and chickpea dahl out of the freezer for tea tonight with some basmati rice and poppadoms...or pottadoms as Ben calls them!! Smile

Jessica I love the sound of your chicken shepherds pie!! I used to use a tin of mushroom condensed soup with a spoonful of dijon mustard mixed into cooked pasta when I was at university..it used to feed the whole house!! Smile

Spooky...one of our favourite family dishes here is
packet of quorn pices
cooked/diced onion
put in a casserome dish with glug of sherry...a good glug or three
dill
tarragon
teaspoon dijon mustard (id oh not looking as he thinks he doesnt like it)
crushedclove garlic
tin of campbells condensed soup
Cook till smells wonderful...serve with rice. It's gorgeous

That sounds lovely Murdo! Smile

My lentil and chickpea dahl is a recipe I threw together one day and it worked,,,it's now a favourite!!

Soften a large onion in oil, stir in two desert spoons of Pataks tikka masala curry paste, add 250g of red lentils, 1 tin of chickpeas and 1 litre of vegetable stock. Simmer for 30 mins to lentil have absorbed stock, add half a tin of coconut milk, salt, pepper and fresh coriander to taste, cook for another 10/15 mins then it's done! Smile You could make double and freeze (the you can use the whole tin oc coconut milk!)as it freezes so well and only takes a gentle 15 min simmer to warm it up while the rice is cooking and you're done!! Smile

There's some more good lentil recipes in this thread too.

I put red lentils in my shepherd's pie meat too, just to make it s t r e t c h a bit further - you can't tell cos they break down so easily.
