Tried and tested by the Melody crew and various classes of children
Ingredients: (makes ten to twelve)
pack of bread muffins
tin of chopped tomatoes
tin of tomato puree
onion chopped and diced finely
mixed herbs
pinch of salt
ground black pepper
pinch of sugar
ham
sweetcorn
cheese
any other pizza topping you might fancy
You can make these in two ways depending on the ages of the children/time
cut the muffins in half like a bread roll
spread the chopped tomatoes on top of each half
add toppings of your choice and cheese
grill until the cheese is golden
OR
make the topping:
place onions into a saucepan and fry in a little olive oil until golden
add chopped tomatoes and two tablespoons of puree
stir and heat until it bubbles
add a couple of teaspoons of oregano and basil, or mixed herbs if you prefer
add sugar, salt and pepper
simmer for a few minutes
cut the muffins in half like a bread roll
spread topping liberally onto muffins
add toppings of your choice plus cheese
grill until golden
Grilling usually takes a couple of minutes if that

I do a similar thing with crumpets, although if I'm feeling lazy I just spread tomato puree onto the crumpet before adding herbs, topping, cheese etc. _________________ "I can resist everything except temptation" - Oscar Wilde.

Delia made crumpet pizza for Red Nose Day a few years ago. You can make sweet ones too. The madder the better.
