But I only know how to make potato and leek soup!!

Do you have any recipes for homemade soups that you really enjoy.

I put chopped carrot, onion, leeks red lentils and a veg oxo into a pan with about 2 pints water and boil for 30 mins, until lentils are mush. If you can get knorr ham stock cubes its even better.

Going to make a pot of this tonight

I put small cubes of whatever veggies I have (leeks/carrots/swede etc) in 1 pt veg stock with loads of black pepperand simmer for around 1/2 hour.  Then when it's cooked stir in a tablespoon or two of creme fraiche to make a cream of veg soupl!

Or Butternut squash soup..... slow roast cubes of 1/2 squash and 1 onion in a tablespoon of olive oil until soft.  Blend/liquidise with 1/2 pt water and 1/2 pint milk and 1/2 de-seeded red chilli. Salt & pepper to taste, bring to gentle simmer and serve.

I love Leek, Cabbage and Bacon! Smile It has lots of other veg in it too!!! Smile I jsut chuck it all usually...so here's a rough recipe! Smile

6 slices of bacon ~ chopped into 'squares' roughly
1 savoy cabbage ~ sliced into small strips
1 large leek ~ chopped
1 small onion ~ finely chopped
1 medium carrot ~ peeled and finely chopped
1 stick of celery ~ finely chopped
1 medium potato ~ peeled and cut into small cubes
Vegetable Stock
Pepper
Olive oil

Fry the onion, leek, celery and carrot in the oil on a moderate heat for 5 mins stirring occasionally but don't allow to burn!
Add the bacon and contine to fry till cooked through
Add the potato and cabbage and stir well
Pour over enough stock to cover, then about half as much again
Simmer for about 20-25 mins on a low heat, half covered
I usually pour half in a bowl and blitz the rest in the pan then add the chunky veg back in
Season with pepper to taste, but don't add any salt as the bacon and veg stock will have plenty in!
You can also mix about 150ml pot of double cream in and warm through gently if you fancy something a but naughtier! Smile

PS Hope you aren't a veggie now I've written this out! Laughing

I make lentil soup in much the same way as Nevisknitter but use potatoes, carrots, onions and celery with lentils and a vegetable Oxo cube stock. I puree the vegetables and lentils to make a smooth soup but I suppose you could leave it lumpy if you wanted!

It's another one of Annabel Karmel's baby and toddler recipes upgraded for bigger kids and bigger peeps  Cool

Ali I hate celery and always leave it out of soups and casseroles - can't think it will make a big diference!!
