Following on from Aknita's thread about waste, I'm going to try cooking from my storecupboard this week.

Tonight we are having home made Chicken soup, and home-made bread from the freezer.

I will assess the cupboard contents later and post back a proper week's menu's, bearing in mind that I'm also trying to do WW as well.

I know we have quorn lumps in the freezer, and plenty of rice/pasta/couscous and a few baking potatoes. There are some carrots and a cauliflower in the fridge, and a few onions.
There is yeast and bread flour and I have a bread-maker.

The tricky bit will be packed lunches for school, and TIME. This is the last week of the month so I have all the Clubs to do. Cooking time will be limited.

I will have to buy milk, but I might manage this week without buying anything else.

Anyone else up for the challenge?

well I used leftovers for lunch, older kids had soup (yesterdays lunch) DH, Ds2 and i had bolognaise sauce (friday ) with rice and mushrooms which i found in a bag in the freezer.
Think I will try to empty the freezer of food this week, it needs a defrost before christmas.

n, this sounds similar to what we're doing to empty our freezer. We've been doing it for three weeks now, this will be our fourth week, and the only things we've had to buy are fresh veg, milk, cheese and a few odds and sods for packed lunches. We had home-made leek and potato soup for lunch and are having macaroni cheese with bacon and tomatoes for tea. Yummy.

That reminds me, we need to sit down, consult our 'what do we have in the freezer?' list and concoct a menu for next week.

n I could do that but have to buy fresh fruit and veg. Smile

DH will still go and buy scones, coconut iced buns, currant loaf, etc etc etc, eat a few slices and throw the rest out stale...............he doesn't buy one pkt of biscuits/crisps/sweets, he buys a dozen............ Sad

I would be really interested to see what other people for a weeks menu. I really struggle to find different and interesting things for the family to week that dont take hours to perpare Rolling Eyes

Any suggestions/ideas?

I do this consistently.

Tomorrow we'll have pork stirfry (pork from the freezer, veg from the fridge and noodles from the store cupboard.

Tuesday will be mince from the freezer made into spaghetti bolognaise from the store cupboard. There will probably be enough left for lunch on Wednesday when tea will be macaroni cheese - I add loads of veg to it to make it healthier and an egg to bind it then I put it under a hot grill to crisp it and serve with a light salad.

Thursday will probably be a soup (homemade butternut squash and red onion) and a sweet as I got some cooking apples in my veg box this week and Friday I will eat back to front because I'll be swimming in the evening so will have a big breakfast, medium lunch and a light tea.

I find this the easiest way to make my housekeeping money go as far as possible (leaving more left over for "other" purchases iykwim nudge nudge say no more)

Good luck to everybody else who is taking part!! I love to hear other ideas.

Gosh, this is great, lots of ideas already.

DH is away at a conference this week so it's just me and YS. I have quorn, as I said, and also soya mince (dried) in the cupboard as a "stretcher" I picked up a month or two back.

Good veggie recipes welcome.
We had our soup, and then a mango and forest fruit smoothie for dessert (freezer again).

N...a quick meal we make is with veggie bacon...cooked pasta...whipped up eggs with milk. Cook the bacon/bacon sub in pan with some butter add cooked pasta and stir in eggy/milk...veggie pasta...tastes out this word...if we are especially hungry I mix in some sweetcorn
